Prep Time: 10 mins | Cook Time: 10 mins | Serves: 2


Potato Waffles


Ingredients:

  • 1 cup leftover mashed potatoes

  • 1 egg

  • 1/3 cup milk

  • 1/4 cup flour (almond or all-purpose)

  • 2 tbsp chopped scallions

  • Salt & pepper to taste

  • Cooking spray


Instructions:

  1. In a bowl, mix mashed potatoes, egg, milk, flour, scallions, salt, and pepper until combined.

  2. Preheat waffle iron and lightly spray with cooking oil.

  3. Scoop 1 1/2 portions of batter into each waffle section.

  4. Close lid and cook for 4 minutes or until golden and crisp.


Burger Sauce


Ingredients:

  • 2 tbsp mayo

  • 1 tbsp ketchup

  • 1 tbsp mustard

  • 1 tsp white vinegar

  • 1 tbsp chopped gherkins

Instructions:Stir all ingredients in a small bowl until smooth.


Assembly


Layer in this order:

  1. Potato waffle (base)

  2. Cheeseburger patty

  3. Sliced tomato

  4. Drizzle of burger sauce

  5. Lettuce

  6. Pickled onions

  7. Potato waffle (top)


Serve immediately.
