Potato Waffles
Ingredients:
1 cup leftover mashed potatoes
1 egg
1/3 cup milk
1/4 cup flour (almond or all-purpose)
2 tbsp chopped scallions
Salt & pepper to taste
Cooking spray
Instructions:
In a bowl, mix mashed potatoes, egg, milk, flour, scallions, salt, and pepper until combined.
Preheat waffle iron and lightly spray with cooking oil.
Scoop 1 1/2 portions of batter into each waffle section.
Close lid and cook for 4 minutes or until golden and crisp.
Burger Sauce
Ingredients:
2 tbsp mayo
1 tbsp ketchup
1 tbsp mustard
1 tsp white vinegar
1 tbsp chopped gherkins
Instructions:Stir all ingredients in a small bowl until smooth.
Assembly
Layer in this order:
Potato waffle (base)
Cheeseburger patty
Sliced tomato
Drizzle of burger sauce
Lettuce
Pickled onions
Potato waffle (top)
Serve immediately.
