Ingredients
1 box of Olly's pulled pork
1 cup sliced bell peppers (fresh or frozen)
1 tbsp Mexican spice mix (cumin, paprika, chili powder, garlic powder)
½ cup shredded cheddar or Monterey Jack cheese
6 small corn or flour tortillas
1 jalapeño, sliced
Fresh coriander (cilantro)
Pickled onions
Optional: Lime wedges, hot sauce, smashed avocado
Method
Sauté Peppers
Heat a pan over medium heat with a little oil.
Add bell peppers and sauté for 2-3 minutes until softened.
Cook Pulled Pork
Add the pulled pork and Mexican spices to the pan.
Stir and cook for 4-5 minutes until heated through.
Assemble Quesadillas
Place a tortilla on a flat surface.
Layer with:
Pulled pork mixture
Pickled onions
Shredded cheese
Fold tortilla in half.
Crisp & Melt
Heat a dry pan over medium heat.
Cook quesadillas for 1-2 minutes per side until golden and cheese melts.
Serve
Top with fresh coriander, jalapeños, and smashed avocado.
Optional: Squeeze lime or drizzle hot sauce.
