Quick Pulled Pork Quesadillas

Prep Time: 5 mins | Cook Time: 10 mins | Serves: 2-3


Ingredients


  • 1 box of Olly's pulled pork

  • 1 cup sliced bell peppers (fresh or frozen)

  • 1 tbsp Mexican spice mix (cumin, paprika, chili powder, garlic powder)

  • ½ cup shredded cheddar or Monterey Jack cheese

  • 6 small corn or flour tortillas

  • 1 jalapeño, sliced

  • Fresh coriander (cilantro)

  • Pickled onions

  • Optional: Lime wedges, hot sauce, smashed avocado


Method


  1. Sauté Peppers

    • Heat a pan over medium heat with a little oil.

    • Add bell peppers and sauté for 2-3 minutes until softened.


  2. Cook Pulled Pork

    • Add the pulled pork and Mexican spices to the pan.

    • Stir and cook for 4-5 minutes until heated through.


  3. Assemble Quesadillas

    • Place a tortilla on a flat surface.

    • Layer with:

      • Pulled pork mixture

      • Pickled onions

      • Shredded cheese

    • Fold tortilla in half.


  4. Crisp & Melt

    • Heat a dry pan over medium heat.

    • Cook quesadillas for 1-2 minutes per side until golden and cheese melts.


  5. Serve

    • Top with fresh coriander, jalapeños, and smashed avocado.

    • Optional: Squeeze lime or drizzle hot sauce.
